- Boil the eggs: Place eggs in a saucepan, cover with water, bring to a boil, then reduce heat and simmer for 8 minutes. Transfer to an ice bath to cool.
- Peel and slice the boiled eggs.
- Prepare the salad base: In a large bowl, add fresh spinach leaves.
- Add avocado: Dice the avocado and gently add to the spinach.
- Combine ingredients: Add the sliced eggs to the salad bowl.
- Dress the salad: Drizzle with olive oil and lemon juice. Season with salt and pepper to taste
- Toss gently and serve immediately.
