Ingredients
  

  • 2 large eggs
  • 1 ripe avocado, diced
  • 3 cups fresh spinach leaves
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt, to taste

Instructions
 

  • Boil the eggs: Place eggs in a saucepan, cover with water, bring to a boil, then reduce heat and simmer for 8 minutes. Transfer to an ice bath to cool.
  • Peel and slice the boiled eggs.
  • Prepare the salad base: In a large bowl, add fresh spinach leaves.
  • Add avocado: Dice the avocado and gently add to the spinach.
  • Combine ingredients: Add the sliced eggs to the salad bowl.
  • Dress the salad: Drizzle with olive oil and lemon juice. Season with salt and pepper to taste
