For the Broccoli:

  • 5-6 cups fresh broccoli florets about 1 medium crown
  • Cut into uniform 1½-inch pieces

For the Sauce:

  • ½ cup low-sodium soy sauce
  • ¾ cup beef broth
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water for slurry
  • 2 teaspoons brown sugar
  • 1 teaspoon white pepper
  • 2-3 cloves fresh garlic minced
  • 1 teaspoon fresh ginger minced

Method
 

Step 1: Prepare the Beef
  1. Trim excess fat from beef sirloin
  2. Slice beef thinly (¼-inch thickness) against the grain
  3. Set aside on cutting board
Step 2: Make the Marinade
  1. In a medium bowl, combine:
  2. 2 tablespoons soy sauce
  3. 1 tablespoon sesame oil
  4. 1 tablespoon cornstarch
  5. ½ teaspoon black pepper
  6. ½ teaspoon white pepper
  7. Whisk until smooth
Step 3: Marinate the Beef
  1. Add sliced beef to marinade
  2. Toss until all pieces are coated
  3. Let sit for 15-30 minutes (can refrigerate)
Step 4: Prepare the Sauce
  1. In a separate bowl, combine:
  2. ½ cup soy sauce
  3. ¾ cup beef broth
  4. 2 tablespoons rice vinegar
  5. 2 tablespoons sesame oil
  6. 2 teaspoons brown sugar
  7. 1 teaspoon white pepper
  8. 2-3 cloves minced garlic
  9. 1 teaspoon minced ginger
  10. Stir well and set aside
Step 5: Create Cornstarch Slurry
  1. Mix 3 tablespoons cornstarch with 3 tablespoons cold water
  2. Stir until smooth
  3. Add to sauce and mix well
  4. Set aside
  5. COOKING PHASE (15 minutes)
Step 6: Stir-Fry the Broccoli
  1. Heat wok or large skillet over HIGH heat until smoking (2-3 minutes)
  2. Add 2 tablespoons vegetable oil
  3. Add broccoli florets to hot oil
  4. Stir continuously for 4-5 minutes until bright green with slight crunch
  5. Don't overcook—broccoli will finish cooking in sauce
  6. Transfer broccoli to clean plate
Step 7: Sear the Beef
  1. Return wok to HIGH heat
  2. Add remaining 1 tablespoon vegetable oil
  3. Wait for oil to smoke/shimmer
  4. Arrange marinated beef in single layer on wok bottom
  5. DO NOT STIR for 1-2 minutes (allows golden crust to form)
  6. After 1-2 minutes, stir beef continuously for another 2-3 minutes
  7. Beef should be mostly cooked with slight pink inside
  8. Remove from heat briefly
Step 8: Combine Everything
  1. Return broccoli to wok with beef
  2. Stir gently to combine
  3. Return wok to HIGH heat
Step 9: Add Sauce and Finish
  1. Stir your prepared sauce vigorously (recombine cornstarch slurry)
  2. Pour sauce into wok with beef and broccoli
  3. Toss everything continuously for 2-3 minutes
  4. Sauce will thicken and coat all ingredients with glossy finish
  5. Stop when sauce reaches desired consistency
