Method
Step 1: Prepare the Beef
- Trim excess fat from beef sirloin
- Slice beef thinly (¼-inch thickness) against the grain
- Set aside on cutting board
Step 2: Make the Marinade
- In a medium bowl, combine:
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- ½ teaspoon black pepper
- ½ teaspoon white pepper
- Whisk until smooth
Step 3: Marinate the Beef
- Add sliced beef to marinade
- Toss until all pieces are coated
- Let sit for 15-30 minutes (can refrigerate)
Step 4: Prepare the Sauce
- In a separate bowl, combine:
- ½ cup soy sauce
- ¾ cup beef broth
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 2 teaspoons brown sugar
- 1 teaspoon white pepper
- 2-3 cloves minced garlic
- 1 teaspoon minced ginger
- Stir well and set aside
Step 5: Create Cornstarch Slurry
- Mix 3 tablespoons cornstarch with 3 tablespoons cold water
- Stir until smooth
- Add to sauce and mix well
- Set aside
- COOKING PHASE (15 minutes)
Step 6: Stir-Fry the Broccoli
- Heat wok or large skillet over HIGH heat until smoking (2-3 minutes)
- Add 2 tablespoons vegetable oil
- Add broccoli florets to hot oil
- Stir continuously for 4-5 minutes until bright green with slight crunch
- Don't overcook—broccoli will finish cooking in sauce
- Transfer broccoli to clean plate
Step 7: Sear the Beef
- Return wok to HIGH heat
- Add remaining 1 tablespoon vegetable oil
- Wait for oil to smoke/shimmer
- Arrange marinated beef in single layer on wok bottom
- DO NOT STIR for 1-2 minutes (allows golden crust to form)
- After 1-2 minutes, stir beef continuously for another 2-3 minutes
- Beef should be mostly cooked with slight pink inside
- Remove from heat briefly
Step 8: Combine Everything
- Return broccoli to wok with beef
- Stir gently to combine
- Return wok to HIGH heat
Step 9: Add Sauce and Finish
- Stir your prepared sauce vigorously (recombine cornstarch slurry)
- Pour sauce into wok with beef and broccoli
- Toss everything continuously for 2-3 minutes
- Sauce will thicken and coat all ingredients with glossy finish
- Stop when sauce reaches desired consistency
