Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until softened
  2. Pour in chicken broth and bring to a boil.
  3. Add shredded chicken, salt, pepper, and thyme. Reduce heat and simmer for 20 minutes.
  4. Add egg noodles and cook for 8–10 minutes, until noodles are tender
  5. Stir in fresh parsley and adjust seasoning before serving.
