Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ½ cup plain full-fat yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 4 cloves garlic minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • teaspoons smoked paprika
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon cayenne pepper
  • teaspoons salt
  • ½ teaspoon black pepper

Method

  1. Step 1: Combine yogurt, olive oil, lemon juice, minced garlic, and all spices in a large bowl. Mix until smooth.
  2. Step 2: Add chicken thighs to the bowl and toss until every piece is fully coated with the marinade.
  3. Step 3: Cover the bowl and refrigerate for at least 2 hours or overnight for best results.
  4. Step 4: Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper.
  5. Step 5: Arrange marinated chicken thighs in a single layer on the sheet pan without overcrowding.
  6. Step 6: Roast for 25 to 30 minutes, flipping once halfway through, until edges are golden and caramelized.
  7. Step 7: Switch oven to broil for the final 2 to 3 minutes to create crispy charred edges.
  8. Step 8: Remove from oven and let the chicken rest for 5 minutes.
  9. Step 9: Slice chicken into thin strips and serve in pita bread, rice bowls, or salads with your favorite sauces and toppings.
