Ingredients
  

  • 1 lb (450g) ground beef or turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth
  • Olive oil for cooking
  • Fresh cilantro or parsley for garnish

Method
 

  1. Heat 1–2 tbsp olive oil in a large pot over medium heat.
  2. Add diced onion and bell pepper, sauté for 5 minutes until softened.
  3. Add garlic and cook for another 1–2 minutes.
  4. Add ground meat, breaking it apart with a spoon, cook until browned.
  5. Stir in tomato paste, diced tomatoes, and broth.
  6. Add kidney beans, black beans, chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Mix well.
  7. Bring chili to a simmer, cover, and cook for 1 hour, stirring occasionally.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh cilantro or parsley.
