Method
- Heat 1–2 tbsp olive oil in a large pot over medium heat.
- Add diced onion and bell pepper, sauté for 5 minutes until softened.
- Add garlic and cook for another 1–2 minutes.
- Add ground meat, breaking it apart with a spoon, cook until browned.
- Stir in tomato paste, diced tomatoes, and broth.
- Add kidney beans, black beans, chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Mix well.
- Bring chili to a simmer, cover, and cook for 1 hour, stirring occasionally.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro or parsley.
