Ingredients
  

  • 2 pounds chicken breast or chicken thighs cut into cubes
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 4 garlic cloves minced
  • 2 teaspoons dried oregano
  • 1 tablespoon red wine vinegar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 6 to 8 skewers
  • Pita bread for serving
  • Tzatziki sauce for serving
  • Sliced red onion cucumber, and tomato, for serving

Method
 

  1. Cut the chicken into even bite-sized cubes.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, red wine vinegar, salt, and black pepper.
  3. Add the chicken to the marinade and coat well.
  4. Cover and marinate in the refrigerator for 30 minutes to 4 hours.
  5. If using wooden skewers, soak them in water for 20 to 30 minutes.
  6. Thread the marinated chicken onto skewers.
  7. Preheat a grill or grill pan over medium-high heat.
  8. Cook the skewers for 10 to 12 minutes, turning occasionally, until the chicken is lightly charred and cooked through.
  9. Let the chicken rest for a few minutes.
  10. Serve with pita bread, tzatziki, red onion, cucumber, and tomato.
