  • 2 cups cooked chickpeas drained and rinsed

  • 2 tablespoons fresh lemon juice
  • 1 clove garlic minced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon dried oregano or fresh herbs
  • 6 ounces feta cheese
  • ¼ cup Greek yogurt
  • 1 tablespoon olive oil for whipped feta
  • Fresh parsley or dill for garnish

Method
 

  1. In a bowl, combine chickpeas, olive oil, lemon juice, garlic, salt, pepper, and herbs. Toss well and set aside to marinate for at least 15 minutes.
  2. Add feta cheese, Greek yogurt, and olive oil to a food processor and blend until smooth and creamy.
  3. Spread the whipped feta onto a serving plate.
  4. Spoon the marinated chickpeas over the whipped feta.
