Ingredients
  

  • 1 lb 450g thinly sliced beef (flank or sirloin)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp gochujang Korean chili paste
  • 3 garlic cloves minced
  • 1 tsp fresh ginger grated
  • 8 corn tortillas
  • 2 cups shredded cabbage
  • 2 green onions sliced
  • 1 tbsp sesame seeds
  • 1 lime cut into wedges
  • 1/4 cup mayonnaise for gochujang mayo
  • 1 tsp gochujang for mayo
  • Salt and pepper to taste
  • 1 tbsp vegetable oil for cooking

Method
 

  1. Marinate the beef: In a bowl, combine soy sauce, brown sugar, gochujang, garlic, ginger, salt, and pepper. Add the beef and marinate for 15 minutes.
  2. Cook the beef: Heat oil in a skillet over medium-high. Add the beef and cook for 3-4 minutes per side until caramelized. Set aside.
  3. Make gochujang mayo: Mix mayonnaise with 1 tsp gochujang in a small bowl.
  4. Assemble tacos: Warm tortillas in a dry skillet. Fill each with beef, cabbage, green onions, and a drizzle of gochujang mayo. Sprinkle sesame seeds and serve with lime wedges.
