Ingredients
4 cups watermelon, cubed and seeds removed
3 large peaches, sliced or cubed
2 tablespoons fresh mint, chopped
1 teaspoon honey (optional)
1 pinch sea salt, to taste
1/2 cup feta cheese, crumbled (optional)
Instructions
Prepare the watermelon:
Cut watermelon into 1-inch cubes, removing seeds and rind. Place in a large mixing bowl.
Prepare the peaches:
Wash and slice peaches into wedges or cubes, removing pits. Add to bowl with watermelon.
Add herbs:
Wash and finely chop fresh mint leaves. Sprinkle over the fruit.
Add liquid ingredients:
Squeeze fresh lime juice over the fruit mixture. Drizzle with honey if using.
Season:
Add a pinch of sea salt to enhance the fruit flavors.
Gently combine:
Using a large spoon, gently fold all ingredients together, being careful not to mash the fruit.
Optional additions:
If using feta cheese, gently fold it in just before serving.
Serve:
Transfer to serving bowl or individual portions. Garnish with fresh mint sprigs and serve immediately.
