Ingredients
  

  • 4 cups watermelon, cubed and seeds removed
  • 3 large peaches, sliced or cubed
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon honey (optional)
  • 1 pinch sea salt, to taste
  • 1/2 cup feta cheese, crumbled (optional)

Instructions
 

  • Prepare the watermelon: Cut watermelon into 1-inch cubes, removing seeds and rind. Place in a large mixing bowl.
  • Prepare the peaches: Wash and slice peaches into wedges or cubes, removing pits. Add to bowl with watermelon.
  • Add herbs: Wash and finely chop fresh mint leaves. Sprinkle over the fruit.
  • Add liquid ingredients: Squeeze fresh lime juice over the fruit mixture. Drizzle with honey if using.
  • Season: Add a pinch of sea salt to enhance the fruit flavors.
  • Gently combine: Using a large spoon, gently fold all ingredients together, being careful not to mash the fruit.
  • Optional additions: If using feta cheese, gently fold it in just before serving.
  • Serve: Transfer to serving bowl or individual portions. Garnish with fresh mint sprigs and serve immediately.
