Prepare the peaches: Wash and slice peaches into wedges or cubes, removing pits. Add to bowl with watermelon.
Add herbs: Wash and finely chop fresh mint leaves. Sprinkle over the fruit.
Add liquid ingredients: Squeeze fresh lime juice over the fruit mixture. Drizzle with honey if using.
Season: Add a pinch of sea salt to enhance the fruit flavors.
Gently combine: Using a large spoon, gently fold all ingredients together, being careful not to mash the fruit.
Optional additions: If using feta cheese, gently fold it in just before serving.
